- 4 chicken breasts, pounded to 1/4 inch thickness
•
- 2 1/2 cups Madeira wine
•
- 2 cups fresh mushrooms, sliced
•
- 2 cups beef stock
•
- 5 tablespoons butter, divided
•
- 1 cup mozzarella cheese, shredded
•
- 1 pound fresh asparagus spears, trimmed
•
- 2 tablespoons olive oil
•
- 3 cloves garlic, minced
•
- 1 1/2 tablespoons cornstarch
•
- Salt and pepper to taste

1. Pound chicken breasts between plastic wrap to 1/4 inch thickness. Season with salt and pepper.

2. Heat olive oil in large skillet over medium-high heat. Cook chicken 4-5 minutes per side until golden. Remove and keep warm.

3. In same pan, melt 2 tablespoons butter. Sauté mushrooms and garlic until golden, about 5 minutes.

4. Add Madeira wine, scraping pan bottom. Simmer until reduced by half, about 10 minutes.

5. Add beef stock, simmer 10-15 minutes until sauce begins to thicken.

6. Mix cornstarch with 2 tablespoons cold water. Whisk into sauce until thickened.

7. Blanch asparagus in boiling water for 2-3 minutes. Shock in ice water.

8. Place chicken in baking dish, top with sauce and mushrooms.

9. Add mozzarella cheese and broil 2-3 minutes until melted and bubbly.
