Ingredients

  • - 4 chicken breasts, pounded to 1/4 inch thickness
  • - 2 1/2 cups Madeira wine
  • - 2 cups fresh mushrooms, sliced
  • - 2 cups beef stock
  • - 5 tablespoons butter, divided
  • - 1 cup mozzarella cheese, shredded
  • - 1 pound fresh asparagus spears, trimmed
  • - 2 tablespoons olive oil
  • - 3 cloves garlic, minced
  • - 1 1/2 tablespoons cornstarch
  • - Salt and pepper to taste

Instructions

  1. 11. Pound chicken breasts between plastic wrap to 1/4 inch thickness. Season with salt and pepper.
