Ingredients

  • - 16 oz elbow macaroni
  • - 4 tablespoons butter
  • - 1/4 cup all-purpose flour
  • - 1 cup whole milk
  • - 1 cup heavy cream
  • - 2 cups sharp cheddar cheese, freshly grated
  • - 1/2 cup Parmesan cheese, freshly grated
  • - 1/2 cup Romano cheese, freshly grated
  • - 4 slices American cheese
  • - 1 teaspoon salt
  • - 1/4 teaspoon black pepper

Instructions

  1. 11. Bring large pot of salted water to boil. Cook macaroni 1 minute less than package directions.
  2. 22. Meanwhile, in large saucepan, melt butter over medium heat. Add flour, whisk 1 minute.
  3. 33. Gradually add milk and cream, whisking constantly. Cook until thickened, 3-4 minutes.
  4. 44. Reduce heat to low. Add cheeses one handful at a time, stirring until melted before adding more.
