- 16 oz elbow macaroni

- 4 tablespoons butter
•
- 1/4 cup all-purpose flour

- 1 cup whole milk
•
- 1 cup heavy cream
•
- 2 cups sharp cheddar cheese, freshly grated

- 1/2 cup Parmesan cheese, freshly grated
•
- 1/2 cup Romano cheese, freshly grated
•
- 4 slices American cheese
•
- 1 teaspoon salt
•
- 1/4 teaspoon black pepper

1. Bring large pot of salted water to boil. Cook macaroni 1 minute less than package directions.

2. Meanwhile, in large saucepan, melt butter over medium heat. Add flour, whisk 1 minute.

3. Gradually add milk and cream, whisking constantly. Cook until thickened, 3-4 minutes.

4. Reduce heat to low. Add cheeses one handful at a time, stirring until melted before adding more.

5. Add American cheese slices, salt, and pepper. Stir until smooth.

6. Fold in cooked pasta, transfer to baking dish.

7. Bake at 350°F for 15-20 minutes until bubbly.
