- 1 package rotini pasta (uncooked)

- 1 cup granulated sugar
•
- 3 tablespoons ground cinnamon
•
- Vegetable oil for deep frying
•
- Powdered sugar for dusting (optional)

1. Bring large pot of water to rolling boil. Add rotini pasta and cook 2 minutes less than package directions for al dente texture.

2. Drain pasta completely in colander. Spread pasta on clean kitchen towels and allow to air dry completely, about 30 minutes.

3. Heat vegetable oil in deep fryer or heavy-bottomed pot to exactly 375°F. Use candy thermometer for precision.

4. Carefully drop dried pasta into hot oil in small batches. Pasta will immediately puff and curl into twists, about 15-20 seconds.

5. Remove twists using spider strainer when golden and crispy. Drain on wire rack lined with paper towels.

6. Combine granulated sugar and ground cinnamon in large mixing bowl. While twists are still hot, toss gently to coat completely.
