Ingredients

  • - 2 cups all-purpose flour
  • - 1 tsp baking powder
  • - 1/2 tsp salt
  • - 1/4 cup vegetable shortening
  • - 3/4 cup warm water
  • - 1 lb ground beef (80/20)
  • - 2 tbsp taco seasoning
  • - 1/4 cup water
  • - 1 cup shredded iceberg lettuce
  • - 1/2 cup diced roma tomatoes
  • - 1 cup shredded cheddar cheese
  • - 1/4 cup sour cream
  • - Vegetable oil for frying

Instructions

  1. 11. Prepare dough by combining flour, baking powder, and salt in a large mixing bowl. Cut in shortening until mixture resembles coarse crumbs.
  2. 22. Gradually add warm water, kneading until smooth dough forms. Rest for 15 minutes, covered.
  3. 33. Divide dough into 4 equal portions. Roll each into thin oval shapes, approximately 6 inches long.
  4. 44. Heat vegetable oil in a deep skillet to 375°F. Carefully fry each dough piece until puffy and golden, about 45 seconds per side. Drain on paper towels.
  5. 55. Brown ground beef in separate skillet. Add taco seasoning and water, simmer until liquid reduces, about 5 minutes.
  6. 66. Assemble chalupas by spreading sour cream on fried bread base. Layer with seasoned beef, shredded lettuce, diced tomatoes, and cheddar cheese.
