•- 1 cup corn kernels
•- 2 ripe avocados
•- 1 cup fresh pico de gallo
•- 1/2 cup sour cream
•- 1/4 cup shredded cheese
•- Salt and pepper to taste

11. Rinse rice thoroughly. Combine rice, water, and pinch of salt in heavy-bottomed pot. Bring to rolling boil, then reduce heat and simmer covered until water absorbs, about 18-20 minutes.
