  • - 1 large red bell pepper, julienned
  • - 2 medium yellow onions, finely diced
  • - 1 can black beans, drained and rinsed
  • - 1 cup fresh corn kernels
  • - 1/4 cup chopped cilantro
  • - 2 limes, quartered
  • - Sea salt and freshly ground black pepper
  • - 1/4 cup sour cream
  • - 1/2 cup fresh pico de gallo

Instructions

  1. 11. Prepare rice using 4 cups water, salt to taste. Cook until fluffy, about 18 minutes.
  2. 22. Marinate chicken thighs in adobo sauce, 1 tbsp olive oil, salt, and pepper for 15 minutes.
