•- 2 cups long-grain white rice
•- 1 lb boneless chicken thighs
•- 2 tbsp adobo sauce from chipotle peppers
•- 3 tbsp olive oil
•- 1 large red bell pepper, julienned
•- 2 medium yellow onions, finely diced
•- 1 can black beans, drained and rinsed
•- 1 cup fresh corn kernels
•- 1/4 cup chopped cilantro
•- 2 limes, quartered
•- Sea salt and freshly ground black pepper
•- 1/4 cup sour cream
•- 1/2 cup fresh pico de gallo
Instructions
11. Prepare rice using 4 cups water, salt to taste. Cook until fluffy, about 18 minutes.
22. Marinate chicken thighs in adobo sauce, 1 tbsp olive oil, salt, and pepper for 15 minutes.
33. Heat cast-iron skillet to medium-high. Sear chicken until internal temperature reaches 165°F, about 6-7 minutes per side. Rest 5 minutes, then slice.
44. In same skillet, sauté onions and bell peppers until caramelized, about 8 minutes.
