- 4 lbs boneless, skinless chicken thighs
•
- 3 chipotle peppers in adobo sauce
•
- 2 tablespoons adobo sauce from can
•
- 3 tablespoons olive oil
•
- 5 cloves garlic, minced
•
- 2 tablespoons ground cumin
•
- 2 teaspoons dried Mexican oregano
•
- 2 teaspoons black pepper
•
- 1½ tablespoons kosher salt
•
- 2 tablespoons apple cider vinegar
•
- 2 tablespoons fresh lime juice
•
- 1 tablespoon onion powder

1. Blend chipotle peppers, adobo sauce, olive oil, garlic, cumin, oregano, black pepper, salt, vinegar, lime juice, and onion powder until smooth.

2. Reserve ¼ cup marinade for basting.

3. Place chicken thighs in a large zip-top bag, pour remaining marinade over chicken.

4. Massage marinade into meat, seal bag removing air. Refrigerate 8-24 hours.

5. Preheat grill to medium-high heat (400°F).

6. Remove chicken from marinade, discard used marinade.

7. Grill chicken 6-8 minutes per side, basting with reserved marinade.

8. Cook until internal temperature reaches 165°F and exterior is lightly charred.
