- 4 lbs boneless, skinless chicken thighs

- 3 chipotle peppers in adobo sauce
•
- 2 tablespoons adobo sauce from can
•
- 3 tablespoons olive oil
•
- 6 garlic cloves, minced
•
- 2 tablespoons ground cumin
•
- 2 teaspoons Mexican oregano
•
- 2 teaspoons black pepper
•
- 2 tablespoons kosher salt
•
- 1 tablespoon onion powder
•
- 3 tablespoons fresh lime juice

1. Blend chipotle peppers, adobo sauce, olive oil, garlic, cumin, oregano, black pepper, salt, onion powder, and lime juice until smooth.

2. Place chicken thighs in a large ziplock bag and pour marinade over them.

3. Massage marinade into meat, remove air from bag, and seal.

4. Marinate 8-24 hours in refrigerator.

5. Remove chicken from refrigerator 30 minutes before cooking.

7. Preheat grill to medium-high heat (400°F).

8. Grill chicken 6-8 minutes per side until slightly charred and internal temperature reaches 165°F.
