- 1.5 lbs chicken breast, cut into 1-inch chunks

- 1/2 cup cornstarch
•
- 1/4 cup soy sauce
•
- 3 tablespoons brown sugar
•
- 4 cloves garlic, minced
•
- 4 green onions, chopped
•
- 1/2 cup vegetable oil
•
- 8 dried red chili peppers, whole
•
- 2 tablespoons rice vinegar
•
- 2 tablespoons hoisin sauce
•
- 1/4 teaspoon white pepper
Instructions

1. Pat chicken pieces completely dry with paper towels

2. Dredge chicken in cornstarch twice, shaking off excess

3. Heat oil in wok or large skillet to 350°F

4. Fry chicken in batches until golden brown (3-4 minutes), drain on paper towels

5. Pour off all but 2 tablespoons oil

6. Add dried chilies and garlic, stir-fry 30 seconds

7. Add soy sauce, brown sugar, rice vinegar, and hoisin sauce

8. Simmer until sauce thickens and coats spoon (2-3 minutes)

9. Return chicken to wok, toss quickly to coat
