Ingredients

  • - 2 lbs ground beef (80/20 lean)
  • - 1 medium yellow onion, finely diced
  • - 2 stalks celery, minced
  • - 1 green bell pepper, small dice
  • - 3 cloves garlic, crushed
  • - 2 (15 oz) cans kidney beans, drained
  • - 1 (15 oz) can pinto beans, drained
  • - 2 (14.5 oz) cans diced tomatoes
  • - 1 (8 oz) can tomato sauce
  • - 2 cups water
  • - 2 tablespoons chili powder
  • - 1 tablespoon ground cumin
  • - 1 teaspoon salt
  • - 1/2 teaspoon black pepper
  • - 1/4 teaspoon cayenne pepper

Instructions

  1. 11. Brown ground beef in large skillet over medium-high heat, breaking into small crumbles until no pink remains, about 8-10 minutes.
  2. 22. Transfer browned beef to large stockpot. Add diced onions, celery, and bell peppers. Sauté until vegetables soften, approximately 5 minutes.
  3. 33. Stir in crushed garlic, cooking until fragrant, about 30 seconds.
  4. 44. Add kidney beans, pinto beans, diced tomatoes, tomato sauce, and water. Mix thoroughly.
  5. 55. Incorporate chili powder, cumin, salt, black pepper, and cayenne. Stir to combine.
  6. 66. Reduce heat to low, cover, and simmer for 2-3 hours, stirring occasionally. Chili should thicken and develop deep, rich flavors.
