- 1.5 lbs chicken breast, sliced against grain

- 2 tbsp soy sauce
•
- 1 tbsp fish sauce
•
- 1 clove garlic, minced

For the Peanut Sauce:
•
- 3/4 cup natural creamy peanut butter
•
- 1 (14 oz) can coconut milk
•
- 2 tbsp soy sauce
•
- 2.5 tbsp brown sugar
•
- 2 tbsp lime juice
•
- 2 cloves garlic, minced
•
- 1.5 tbsp fresh ginger, minced
•
- 1.5 tbsp red curry paste
•
- 1 tbsp fish sauce

1. Marinate sliced chicken in soy sauce, fish sauce, and garlic for 30 minutes

2. Heat large skillet over medium-high heat

3. Toast curry paste in dry pan for 30 seconds until fragrant

4. Add coconut milk, whisking to combine

5. Add peanut butter, remaining soy sauce, brown sugar, lime juice, garlic, ginger, and fish sauce

6. Simmer sauce gently for 5-7 minutes, whisking occasionally until thickened

7. Remove sauce and set aside

8. In same pan, cook marinated chicken 3-4 minutes per side
