- 1 lb ground beef (80/20 blend)

- 2 medium yellow onions, finely diced

- 2 cloves garlic, minced
•
- 1 (15 oz) can kidney beans, drained

- 1 (14.5 oz) can diced tomatoes
•
- 2 tbsp tomato paste
•
- 2 tbsp chili powder
•
- 1 tbsp ground cumin
•
- 1 tsp smoked paprika
•
- Salt and black pepper to taste

- 2 cups sharp cheddar cheese, freshly shredded
•
- 1/4 cup green onions, thinly sliced

1. Preheat oven to 425°F. Spread frozen tater tots on a large baking sheet in a single layer.

2. Bake tots until crispy and golden brown, about 20-25 minutes, turning once halfway through.

3. Meanwhile, brown ground beef in a large cast-iron skillet over medium-high heat until no pink remains, about 7-8 minutes.

4. Add diced onions and garlic, sauté until onions are translucent and fragrant, about 4 minutes.

5. Stir in kidney beans, diced tomatoes, tomato paste, and all spices. Reduce heat and simmer for 15 minutes, stirring occasionally.

6. Remove tots from oven. Top evenly with hot chili mixture.
