Ingredients

  • - 1 lb fresh lobster meat, roughly chopped
  • - 4 tbsp unsalted butter
  • - 1 large Spanish onion, finely diced
  • - 2 stalks celery, minced
  • - 3 cloves garlic, crushed
  • - 1/4 cup all-purpose flour
  • - 2 cups seafood stock
  • - 1 cup heavy cream
  • - 1/2 cup dry sherry
  • - 2 bay leaves
  • - 1 tsp fresh thyme leaves
  • - 1/4 tsp cayenne pepper
  • - Kosher salt and white pepper to taste
  • - 2 tbsp fresh chives, finely chopped

Instructions

  1. 11. Melt butter in a heavy-bottomed stockpot over medium heat until foam subsides, about 2 minutes.
  2. 22. Sauté onions and celery until translucent and softened, approximately 4-5 minutes. Add garlic and cook for additional 30 seconds.
  3. 33. Sprinkle flour over vegetable mixture, stirring constantly to create a blonde roux. Cook for 2-3 minutes to remove raw flour taste.
  4. 44. Gradually whisk in seafood stock, ensuring no lumps form. Add bay leaves, thyme, and cayenne.
  5. 55. Simmer bisque for 15 minutes, stirring occasionally. Remove bay leaves.
  6. 66. Blend half the mixture until smooth, then return to pot. Add heavy cream and sherry.
  7. 77. Fold in lobster meat, heating gently without boiling. Season with salt and white pepper.
  8. 88. Ladle into warmed bowls, garnish with fresh chives.
