Ingredients

  • - 1.5 lbs lobster meat and shells
  • - 6 cups seafood stock
  • - 2.5 cups heavy cream
  • - 3/4 cup butter
  • - 1/2 cup all-purpose flour
  • - 1 medium onion, finely diced
  • - 3 celery stalks, finely diced
  • - 3 garlic cloves, minced
  • - 3 tbsp tomato paste
  • - 1/4 cup sherry
  • - 1.5 tsp Old Bay seasoning
  • - 1 tsp salt
  • - 1/2 tsp white pepper

Instructions

  1. 11. Make stock: Simmer lobster shells in seafood stock for 30 minutes. Strain and reserve.
  2. 22. Melt butter in large pot over medium heat. Add onion, celery, garlic. Sauté 5 minutes.
  3. 33. Add flour, create roux. Cook 3-4 minutes until blonde.
  4. 44. Gradually whisk in strained stock. Add tomato paste, Old Bay.
  5. 55. Simmer 20 minutes, stirring occasionally.
  6. 66. Remove 2 cups mixture, carefully blend until smooth. Return to pot.
  7. 77. Temper cream: Slowly add 1/2 cup hot soup to cream, then add to pot.
  8. 88. Add lobster meat, simmer 5 minutes (do not boil).
  9. 99. Finish with sherry, salt, pepper.
  10. 1010. Strain through fine-mesh sieve twice.
