- 1.5 lbs fresh lobster meat (plus shells)

- 6 cups seafood stock
•
- 2.5 cups heavy cream
•
- 1/2 cup unsalted butter
•
- 1/2 cup all-purpose flour
•
- 1 medium onion, finely diced
•
- 3 celery stalks, finely diced
•
- 3 garlic cloves, minced
•
- 3 tbsp tomato paste
•
- 1/4 cup sherry
•
- 1.5 tsp Old Bay seasoning
•
- 1 tsp salt
•
- 1/2 tsp white pepper

1. Make stock using lobster shells: Simmer shells in seafood stock for 30 minutes, strain.

2. Melt butter in large pot over medium heat. Add onion, celery, garlic; sauté 5 minutes.

3. Add flour to make roux, cook 3-4 minutes until blonde.

4. Gradually whisk in strained stock, tomato paste, Old Bay seasoning.

5. Simmer 20 minutes, stirring occasionally.

6. Remove 2 cups soup, blend until smooth, return to pot.

7. Temper cream: Slowly add 1 cup hot soup to cream, then add mixture back to pot.

8. Add lobster meat, simmer 5 minutes (do not boil).

9. Finish with sherry, salt, pepper.

10. Strain through fine-mesh sieve twice for silky texture.
