Ingredients

  • - 1.5 lbs fresh lobster meat (plus shells)
  • - 6 cups seafood stock
  • - 2.5 cups heavy cream
  • - 1/2 cup unsalted butter
  • - 1/2 cup all-purpose flour
  • - 1 medium onion, finely diced
  • - 3 celery stalks, finely diced
  • - 3 garlic cloves, minced
  • - 3 tbsp tomato paste
  • - 1/4 cup sherry
  • - 1.5 tsp Old Bay seasoning
  • - 1 tsp salt
  • - 1/2 tsp white pepper

Instructions

  1. 11. Make stock using lobster shells: Simmer shells in seafood stock for 30 minutes, strain.
  2. 22. Melt butter in large pot over medium heat. Add onion, celery, garlic; sauté 5 minutes.

  4. 44. Gradually whisk in strained stock, tomato paste, Old Bay seasoning.
