- 1 cup long-grain white rice

- 1/2 lb andouille sausage, diced

- 2 medium yellow onions, finely diced

- 3 green onions, thinly sliced

- 2 cloves garlic, minced
•
- 2 tbsp bacon drippings
•
- 1 tsp Cajun seasoning
•
- 1/2 tsp dried thyme
•
- 1/4 tsp cayenne pepper
•
- Salt and black pepper to taste

- 2 cups chicken stock

1. Heat bacon drippings in a heavy-bottom Dutch oven over medium-high heat.

2. Sauté diced andouille sausage until edges crisp and brown, about 4-5 minutes.

3. Add finely diced yellow onions, cooking until translucent and slightly caramelized, approximately 6-7 minutes.

4. Stir in minced garlic, Cajun seasoning, thyme, and cayenne. Cook until fragrant, about 45 seconds.

5. Pour in kidney beans with their liquid and chicken stock. Reduce heat to low and simmer, partially covered, for 20 minutes.

6. In a separate pot, cook rice according to package instructions using chicken stock instead of water.
