•- 1 pound medium shell pasta
•- 2½ tablespoons unsalted butter
•- 1¼ cups heavy cream
•- ¾ cup whole milk
•- 9 oz white American cheese (from deli counter), sliced
•- 4 oz sharp white cheddar cheese, freshly shredded
•- ¾ teaspoon Dijon mustard
•- ¾ teaspoon kosher salt
•- ⅓ teaspoon white pepper
•- ½ cup reserved pasta cooking water
Instructions
11. Bring a large pot of salted water to boil. Cook shells until al dente (about 1 minute less than package directions). Reserve ½ cup pasta water before draining.
22. Meanwhile, in a large saucepan over medium-low heat, melt butter.
