3. Heat vegetable oil in a large wok or heavy skillet until shimmering hot, about 2-3 minutes.

4. Sear beef strips in small batches, creating crispy golden edges. Cook 2-3 minutes per batch. Remove and set aside.

5. In same wok, quickly stir-fry onions and bell peppers until slightly charred but still crisp, about 4 minutes.
