Ingredients

  • - 1/2 cup honey mustard
  • - 1 cup sliced cremini mushrooms
  • - 8 oz sharp cheddar cheese, freshly shredded
  • - 8 oz Monterey Jack cheese, freshly shredded
  • - 8 slices premium bacon
  • - 2 tbsp fresh chives, finely chopped
  • - 2 tbsp kosher salt
  • - 1 tbsp fresh cracked black pepper
  • - 3 tbsp olive oil
  • - 2 tbsp unsalted butter

Instructions

  1. 11. Butterfly chicken breasts to even thickness, about 1/2-inch thick.
  2. 22. Season chicken generously with kosher salt and cracked black pepper on both sides.
  3. 33. Heat olive oil in large cast-iron skillet over medium-high heat until shimmering.
  4. 44. Sear chicken breasts until golden brown, about 4-5 minutes per side. Transfer to baking sheet.
  5. 55. In same skillet, crisp bacon until perfectly rendered and dark golden, about 3-4 minutes per side. Set aside on paper towels.
