- 1/2 cup honey mustard

- 1 cup sliced cremini mushrooms

- 8 oz sharp cheddar cheese, freshly shredded

- 8 oz Monterey Jack cheese, freshly shredded

- 8 slices premium bacon
•
- 2 tbsp fresh chives, finely chopped

- 2 tbsp kosher salt
•
- 1 tbsp fresh cracked black pepper

- 3 tbsp olive oil
•
- 2 tbsp unsalted butter

1. Butterfly chicken breasts to even thickness, about 1/2-inch thick.

2. Season chicken generously with kosher salt and cracked black pepper on both sides.

3. Heat olive oil in large cast-iron skillet over medium-high heat until shimmering.

4. Sear chicken breasts until golden brown, about 4-5 minutes per side. Transfer to baking sheet.

5. In same skillet, crisp bacon until perfectly rendered and dark golden, about 3-4 minutes per side. Set aside on paper towels.

6. Sauté mushrooms in remaining bacon fat until deeply caramelized, about 5-6 minutes.

7. Brush each chicken breast with honey mustard, covering completely.

8. Layer each breast with sautéed mushrooms, crumbled bacon, and blend of cheddar and Monterey Jack cheeses.

9. Place in preheated 375°F oven and bake until cheese is melted and chicken reaches 165°F internal temperature, approximately 10-12 minutes.
