Ingredients

  • - 1 large ciabatta loaf or 4 Portuguese-style rolls
  • - 125g (4.5 oz) unsalted butter, softened to room temperature
  • - 5 garlic cloves, very finely minced
  • - 2½ tablespoons fresh flat-leaf parsley, finely chopped
  • - ½ teaspoon fine sea salt
  • - ¼ teaspoon freshly ground black pepper
  • - ¾ teaspoon fresh lemon juice
  • - ⅓ teaspoon peri-peri seasoning or crushed chili flakes
  • - ¼ teaspoon garlic powder

Instructions

  1. 1Bring butter to room temperature for at least 30 minutes before starting. Preheat your oven to 190°C (375°F).
  2. 2Combine softened butter in a medium mixing bowl with minced garlic cloves, sea salt, black pepper, lemon juice, peri-peri seasoning, and garlic powder. Beat together using a fork or wooden spoon until thoroughly blended and creamy, about 2 minutes.
  3. 3Slice ciabatta loaf horizontally through the middle to create top and bottom halves. If using Portuguese rolls, cut each roll lengthwise without separating completely.
  4. 4Spread garlic butter mixture generously across all cut surfaces of the bread, ensuring even coverage from edge to edge. Reserve about 1 tablespoon of chopped fresh parsley for final garnish.
  5. 5Wrap bread loosely in aluminum foil, leaving the top slightly open to allow steam to escape. Place on a baking sheet.
  6. 6Bake in preheated oven until butter melts completely and bread warms through, about 8-10 minutes.
  7. 7Remove foil carefully and increase oven temperature to broil setting (or 220°C/425°F). Return bread to oven on top rack.
  8. 8Toast uncovered until edges turn golden brown and crispy, watching carefully to prevent burning, about 2-3 minutes.
  9. 9Remove from oven immediately and sprinkle remaining fresh parsley over the hot garlic bread. Slice ciabatta into individual portions or separate rolls.
  10. 10Serve straight from oven on a wooden board or basket lined with parchment paper for authentic restaurant presentation.
