Ingredients

  • - 8 cups finely shredded cabbage
  • - 1/4 cup shredded carrots
  • - 2-3 tablespoons finely minced onion
  • - 1/2 cup mayonnaise
  • - 1/4 cup buttermilk
  • - 1/4 cup white sugar
  • - 2 tablespoons white vinegar
  • - 2 tablespoons lemon juice
  • - 1/4 teaspoon celery salt
  • - 1/4 teaspoon black pepper

Instructions

  1. 11. Using a food processor with the fine shredding disk, shred cabbage and carrots until very fine (smaller than typical coleslaw).
  2. 22. Mince onion very finely using a sharp knife or food processor.
  3. 33. In a large bowl, whisk together mayonnaise, buttermilk, sugar, vinegar, lemon juice, celery salt, and pepper until smooth.
  4. 44. Add shredded vegetables to the dressing and toss thoroughly to coat.
  5. 55. Cover tightly and refrigerate for minimum 4 hours, preferably overnight.
  6. 66. Before serving, drain any excess liquid and stir well.
