Ingredients

  • - 1½ cups all-purpose flour
  • - 3½ teaspoons baking powder
  • - 1 tablespoon granulated sugar
  • - ½ teaspoon fine sea salt
  • - 1¼ cups whole milk
  • - 1 large farm-fresh egg
  • - 3 tablespoons unsalted butter, melted
  • - 1 teaspoon pure vanilla extract
  • - Vegetable oil for griddle

Instructions

  1. 11. Sift together flour, baking powder, sugar, and salt in a large mixing bowl.
  2. 22. Whisk milk, egg, melted butter, and vanilla in a separate bowl until completely incorporated.
  3. 33. Create a well in the center of dry ingredients. Pour wet mixture into dry ingredients. Stir gently until just combined - some small lumps are perfect.
  4. 44. Heat flat griddle or non-stick pan to 375°F. Lightly brush surface with vegetable oil.
  5. 55. Using a ¼ cup measure, pour batter onto hot griddle. Cook until tiny bubbles form across surface, about 2-3 minutes.
  6. 66. Flip pancake and cook reverse side until golden brown, approximately 1-2 minutes.
  7. 77. Transfer to warm plate. Repeat with remaining batter.
