- 2 lbs ground beef (80/20)

- 1 medium onion, finely diced
•
- 35 saltine crackers, finely crushed
•
- 3 large eggs
•
- 1/2 cup whole milk
•
- 1/2 cup ketchup (plus 1/2 cup for glaze)
•
- 1 tsp salt
•
- 1/2 tsp black pepper
•
- 1 cup sharp cheddar cheese, shredded
•
- 1/4 cup green bell pepper, finely diced
•
- 8 oz tomato sauce

1. Preheat oven to 350°F. Line 9x13 baking dish with parchment paper.

2. Hand-crush saltines into fine crumbs.

3. In large bowl, combine ground beef, crushed saltines, eggs, milk, 1/2 cup ketchup, salt, pepper, cheese, onion, and bell pepper.

4. Mix gently by hand until just combined - do not overmix.

5. Shape mixture into loaf in prepared baking dish.

6. Pour tomato sauce over top.

8. Spread remaining 1/2 cup ketchup on top.
