2. Cut cold butter into flour mixture using pastry cutter until texture resembles coarse cornmeal.

3. Slowly incorporate milk, stirring until soft dough forms. Do not overmix.

4. Roll dough to 1/4-inch thickness on floured surface. Cut into 2-inch diamond shapes.

5. Bring chicken stock to rolling simmer in large Dutch oven.

6. Gently drop dumpling diamonds into simmering stock. Do not crowd pot.
