- 1 lb boneless chicken breast, diced small
•
- 2 cups shredded pepper jack cheese
•
- 1 can black beans, drained
•
- 1 cup frozen corn kernels
•
- 2 medium poblano peppers, finely minced
•
- 3 green onions, thinly sliced
•
- 1/4 cup fresh cilantro, chopped
•
- 2 tbsp ground cumin
•
- 1 tbsp chili powder
•
- 1 package large egg roll wrappers
•
- 4 cups vegetable oil for frying
•
- Salt and pepper to taste

1. Sauté chicken in olive oil until completely cooked through and golden, about 7 minutes

2. Add poblanos, corn, and black beans; cook additional 3 minutes

3. Mix in cheese, cilantro, cumin, chili powder, salt and pepper

4. Cool mixture completely before wrapping

5. Place 3 tbsp filling in center of egg roll wrapper

6. Fold corners tightly, sealing edges with water

7. Heat oil to 375°F in heavy-bottomed pan

8. Fry egg rolls until crispy and golden brown, about 2-3 minutes per side

9. Drain on wire rack with paper towels underneath
