Ingredients

  • - 1 lb boneless chicken breast, diced small
  • - 2 cups shredded pepper jack cheese
  • - 1 can black beans, drained
  • - 1 cup frozen corn kernels
  • - 2 medium poblano peppers, finely minced
  • - 3 green onions, thinly sliced
  • - 1/4 cup fresh cilantro, chopped
  • - 2 tbsp ground cumin
  • - 1 tbsp chili powder
  • - 1 package large egg roll wrappers
  • - 4 cups vegetable oil for frying
  • - Salt and pepper to taste

Instructions

  1. 11. Sauté chicken in olive oil until completely cooked through and golden, about 7 minutes
  2. 22. Add poblanos, corn, and black beans; cook additional 3 minutes
