Ingredients

  • - 4 large ripe avocados, diced
  • - 3 sun-dried tomatoes in oil, minced
  • - 1 small red onion, finely diced
  • - 2 tablespoons fresh cilantro, chopped
  • - 1/2 teaspoon salt
  • - 15-20 egg roll wrappers
  • - Oil for frying
  • Tamarind-Cashew Dipping Sauce:
  • - 1/4 cup honey
  • - 1/4 cup rice wine vinegar
  • - 1/2 cup cashews, ground
  • - 2 tablespoons tamarind paste
  • - 1 teaspoon cumin
  • - 1/4 cup soy sauce

Instructions
