Ingredients
•
- 1½ cups warm water (110-115°F)
•
- 1 packet active dry yeast (2¼ tsp)
•
- 1 tbsp granulated sugar
•
- 4½ cups all-purpose flour
•
- 2 tsp kosher salt
•
- 2 tbsp unsalted butter, melted
•
- ¼ cup light brown sugar
•
Cinnamon Sugar Coating:
•
- ½ cup granulated sugar
•
- 2 tbsp ground cinnamon
•
- ¼ cup unsalted butter, melted
•
Pretzel Bath:
•
- 8 cups water
•
- ½ cup baking soda
Instructions
1
1. Activate yeast by whisking warm water, yeast, and 1 tbsp sugar. Let bloom until foamy, about 5-7 minutes.
2
2. Combine flour and salt in stand mixer. Create well in center, pour in yeast mixture and melted butter.
3
3. Knead dough using dough hook for 6-8 minutes until smooth and elastic. Surface should be tacky but not sticky.
4
4. Transfer to greased bowl, cover with plastic wrap. Proof in warm area until doubled, about 1 hour.
5
5. Preheat oven to 450°F. Line baking sheets with parchment paper.
6
6. Divide dough into 12 equal portions. Roll each into 24-inch rope, twist into classic pretzel shape.
7
7. Prepare baking soda bath by boiling water and baking soda.
8
8. Dip each pretzel in bath for 30 seconds using slotted spoon. Place on prepared baking sheet.
9
9. Sprinkle with kosher salt. Bake until deep golden brown, 12-15 minutes.
10
10. Immediately brush with melted butter, then generously coat in cinnamon sugar mixture.
