- 2 green onions, thinly sliced

- 1 tbsp fresh thyme leaves

- Kosher salt and cracked black pepper

- 1/4 cup chicken stock

- 2 tbsp unsalted butter

1. Whisk bourbon, soy sauce, brown sugar, Dijon mustard, and minced garlic in a large bowl.

2. Season chicken breasts with salt and pepper. Marinate chicken in bourbon mixture for 30 minutes, turning occasionally.

3. Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.

4. Remove chicken from marinade, reserving liquid. Sear chicken until golden brown, about 5-6 minutes per side.

5. Remove chicken and set aside. In same skillet, sauté diced onions until translucent, about 3 minutes.

6. Pour reserved marinade and chicken stock into skillet. Reduce heat and simmer until sauce thickens, about 8-10 minutes.
